Bubble& was created by husband-and-wife team Rupert Smith and Marita Lietz in 2013 with the aim to reinvent the class British dish, Bubble & Squeak. Since then Bubble& have been the proud recipients of not one but two Great Taste Awards, won the first series of BBC2’s Million Pound Menu, and were a finalist in The British Street Food Awards.
Atul Kochar, Indian-born, British based chef, restaurateur, and television personality, was a key investor on the Million Pound Menu. Impressed with Bubble& he invested in the couple and the year long Bubble& residency at Hawkyns at The Crown Inn, Old Amersham was born in 2019.
Following on from a highly successful residency, Rupert and Marita started the process to write the next chapter in the Bubble& story, which will see the opening of an independent site in Hampshire where they will be dishing up lots of Bubble& goodness from 2021.
